FRIED MARROW FLOWERS  


Ingredients for 4-6 people: 20 marrow flowers, flour gr.200, 4 eggs, extra virgin olive oil, salt.   

Preparation and cooking time: 45 minutes.

 

Preparation

 

Wash the flowers and cut the peduncle. Prepare a batter in a small bowl mixing flour, eggs, a pinch of salt. Dip the flowers in this batter then fry them in hot oil.


POTATO SALAD


Ingredients for 4 people: 6 potatoes, 6 tomatoes, 1 small onion, 2 spoons of black olives, oregano, radishes, peppers, vinegar, extra virgin olive oil, salt.   

Preparation and cooking time: 30 minutes. 

 

Preparation

 

Boil the potatoes, peel them, to cut them into pieces, add tomatoes, onion, radishes, peppers in slices. Add the black olives and to season with oil, vinegar, salt. 


"PANZEROTTI" OF POTATOES 


Ingredients for 6-8 people: Kg.1 of potatoes, flour gr.100, gr.150 of grated cheese, gr.300 of bread crumbles, 4 eggs, parsley, pepper, extra virgin olive oil, salt.   

Preparation and cooking time: 1 hour.

 

Preparation

 

Boil the potatoes, peel them and mash them. Knead the mashed potatoes with cheese, flour, eggs, half the bread crumbles, minced parsley, a sprinkling of pepper and salt. Take a handful of this mixture and shape some croquettes. Pass them in the read crumbles then in hot oil.


"PITTA" OF POTATOES 


Ingredients for 6-8 people: kg.2 of potatoes, 3 eggs, dl.2 of béchamel, gr.70 of grated pecorino cheese, extra virgin olive oil, pepper, salt.   

For stuffing: 8 onions, 3 eggs, 1 clove of garlic, 2 spoons of sugar, 1 pinch of oregano, 1 spoon of capers, 6 peeled tomatoes, 2 spoons of green olives.    

Preparation and cooking time: 1 hour 30 minutes.

 

Preparation

 

Boil the potatoes, peel them and mash them. Knead the mashed potatoes with béchamel, pecorino cheese, eggs, a pinch of salt, a sparkling of pepper. Put 2/3 of the mixture in a baking pan covered with tinfoil. Since the mixture is still very soft take only a handful at the time, with a wet hand. Boil the onions and pass them in the vegetable mill. Brown together a clove of garlic, the mashed potatoes, peeled tomatoes, two spoons of sugar, oregano, and salt and then cook for 15-20 minutes. Pour this mixture in the baking pan on the potatoes. Add the boiled eggs in slices, capers and stone olives. Cover with the rest of the potatoes and bake at 180° for half an hour. 


"PITTULE"


Ingredients for 8-10 people: flour kg.1, 1 cube of brewer’s yeast, lukewarm water, extra virgin olive oil, salt.   

Preparation and cooking time: 1 hour 30 minutes.

 

Preparation

 

Knead in a big bowl the flour and the yeast melted in the water. Knead for long until the dough is soft and well blended. Put a napkin on the bowl and leave it to stand for 2-3 hours in a warm place. Take a large frying pan with abundant oil, wait until you see the steam, then take a spoon of the mixture and dip it in the oil. Fry about ten pittule at the time. They are cooked when they come to the surface and look golden brown.

 

 

OTHER VERSIONS OF THE RECIPE:

 

PIZZA "PITTULE"  

Ingredients: 1 onion, gr.200 of marrow, gr.100 of ripe tomatoes, 2 spoons of stone black olives, 1

spoon of capers, 4 salted anchovies. 

Preparation

 

Put in a bowl the minced onion, pieces of ripe tomatoes, the marrows in small pieces, salt and leave to marinate for two hours. When the dough for the pittule is ready, add the vegetables, the olives, the capers and the anchovies.

 

 

 

CAULIFLOWER  "PITTULE" 

Ingredients: gr.700 of cauliflower. 

 

Preparation

 

Choose some cauliflower tops and blanch them in salted water. Add them to the pittule and fry them.

 

 

 

DRIED COD  "PITTULE"

Ingredients: 1/2 kg. of dried cod.

 

Preparation

 

 Soak the cod for a couple of hours, crumble it and add it to the dough and fry.

 

 

 

TURNIP "PITTULE" 

Ingredients:1 kg of turnips.

 

Preparation

 

Choose some of the broccolis of the turnips and blanch them in abundant salted water. Add them to the dough and fry the mixture.  

 

 

 

ANCHOVIES  "PITTULE" 

Ingredients: 10 anchovies.

 

Preparation

 

Remove the salt from the anchovies, wash them and cut them into small pieces. Add those to the dough and fry this mixture.

 

 

 

SWEET  "PITTULE"

Ingredients: 4-5 spoons raisin.

 

Preparation

 

Soak the raisin in lukewarm water, add them to dough and fry the mixture.


 ARTICHOKES AND EGGS   


Ingredients for 5-7 people: artichokes, pepper, extra virgin olive oil, salt, eggs parsley, onion.   

Preparation and cooking time: about 1 hour. 

 

Preparation

 

Put in a saucepan the clean artichokes, minced parsley, salt, oil, pepper. Fill with water and cook on a low flame. Just before the end,  add the eggs (you can also whip them). Cook for another couple of minutes.
